Blondi Beach Dolphin Recipe

Hello Ladies,
Lately I’ve been craving light fish recipes that are full of taste but not so full of empty calories. Here’s what I served up tonight for dinner under the stars. Xoxo, Blondi

Pan Grilled Dolphin with fresh corn and Jasmin rice. Fresh apricots for dessert.

1 lb. Fresh Dolphin (Mahi-Mahi)
2-3 Lemons
2 T Olive Oil
3 T. Unsalted Butter
Salt and Pepper
Shredded Parmesan
Panko Bread crumbs
Egg Yolk
Wash fish with egg yolk
Roll each piece in panko bread crumbs, salt and pepper
Heat grill pan with oil, butter and juice of 1 lemon
Put dolphin in hot grill pan and cook for about 2-4 minutes on each side

Serve immediately over Jasmin rice and buttered corn.
Include a bowl of fresh apricots for a light dessert treat.
